Indian Whisky

Pour two whiskies side by side, one pale, light and citrusy, the other dark, rich and thick with dried fruit, and it can be hard to believe they started life as the same three ingredients. Whisky, at its most basic, is grain, water and yeast: cereal fermented into a rough beer, distilled into spirit, then left in oak to mature. But describing it like that belies the complexity of the spirit and the choices available to a distillery to create myriad different styles. Almost every stage between field and bottle offers a fork in the road, and the route taken shapes the character in the glass far more than most drinkers realise.
To begin at the beginning, let’s talk about the raw materials. Whisky can be made from barley, wheat, corn, rye or a blend of those grains, and each brings its own raw character: barley tends toward digestive biscuit and cereal notes, corn leans popcorn, rye brings baking spice and some menthol, whilst wheat gives softness like bread dough. Water plays a less prominent role than romantic distillery tours suggest. Its mineral content has some influence, but it's rarely the star some marketing would have you believe. Yeast, however, is the unsung workhorse that is finding its voice this past decade, converting sugars into alcohol and, crucially, into the hundreds of aromatic by-products such as esters and fatty acids that give new-make spirit its first flickers of personality.
And then there's the law. For a spirit to be called whisky in most producing countries, it needs to be distilled from cereals, matured in oak casks and aged for a minimum period. That means three years in Scotland, Ireland and increasingly elsewhere, though rules vary by country. Nothing younger than that can wear the name, however good it tastes. Until the three-year mark, it's new-make spirit, something you can often buy from distilleries to catch a glimpse of their whisky at an early stage of its journey.
The choices really start piling up at fermentation. Distilleries decide whether to ferment a clear wort, the sugary liquid drawn off the mash with solid grain particles filtered out, or a cloudy one, where husk and grain material stays in the mix. Clear wort tends to produce a lighter, more floral and fruity spirit, prized by distilleries chasing a cleaner style. Cloudy wort carries more oils and proteins into the fermentation and typically pushes towards a heavier, more cereal or nutty character.
Then there's time. A short fermentation, perhaps under 50 hours, gives a spirit that leans cereal and nutty, with alcohol as the main by-product. Push fermentation past 60, 80, even 100 hours, and fatty acids begin to react with alcohol to form fruity, estery compounds, the kind of notes that give some whiskies a distinctly tropical or orchard-fruit lift. For fans of single malt Scotch whisky, fermentation is the oft-overlooked part of production that the growth of new distilleries has sought to bring back to the fore. Some fermentations reach up to two weeks, with experiments using Champagne yeast, beer yeast and even wild yeast.
Now the grain has become an alcoholic liquid, a sort of rough beer, distillation brings its own fork in the road: the cut points. As the spirit runs off the still, the distiller separates it into three fractions. The foreshots, or heads, come first: volatile, sharp, laden with compounds nobody wants in the final spirit, partly because they could leave you blind or even dead. Then the heart, the desirable middle cut, which is what actually goes on to become whisky. Finally the feints, or tails, which are heavier, oilier and less pleasant on their own, but can be desirable if you want to age your whisky for a very long time.
Where exactly the distiller draws the line between heads, heart and tails is a judgement call repeated many times a day, and it defines a huge amount of the spirit's weight and character. A spirit might initially come off the still grassy and light, then gradually turn to tropical fruits. The distiller can therefore choose to capture only grassy notes, tropical fruit notes or a combination of both. Two distilleries running identical mash and fermentation can still produce noticeably different new-make spirit purely through where they choose to cut.
But new-make spirit, however carefully made, is still just the raw material for what comes next. Maturation is where most people would recognise many of the flavours coming from. Cask choice is a big lever here. A cask that previously held bourbon imparts vanilla, coconut and soft caramel notes, largely from the vanillin and lactones in American oak. A sherry cask, typically European oak, brings darker, richer flavours such as dried fruit and spice, sometimes with a touch of sulphur if the cask is particularly active. New oak, charred or freshly toasted, hits harder and faster, with big wood tannin and spice.
Whether a cask is "first-fill", used once before and still with plenty to give, or a tired old "refill" cask that's been through several fills already changes the intensity of everything the wood contributes. Cask size changes the pace too. A smaller cask has a higher ratio of wood surface area to liquid volume, so extraction happens faster. That's part of why some producers experimenting with smaller casks can mature spirit more quickly, for better or worse.
The comparison I like to use is, appropriately for an Indian business, a tea bag. You can use a tea bag several times; the tea just gets weaker each time. Casks are the same.
But wood contact isn't just about flavour compounds moving from cask to spirit. It's also where oxidation happens: a slow, steady exchange of oxygen through the porous oak that softens harsh edges, mellows the spirit and builds the layered complexity that makes an old whisky taste different from a young one beyond simple wood extraction. This is a genuinely slow process. There's no shortcut to the complexity that comes from years of gentle oxidation, which is one reason age still commands a premium even as some producers get cleverer about accelerating other parts of maturation.
Finally, there's the part few new whisky drinkers think about at all: climate. As whisky matures, some of it evaporates through the cask, the so-called angel's share. How much disappears, and in what proportion of alcohol to water, depends heavily on where the warehouse sits. Big changes in temperature also cause a cask to expand and contract, absorbing spirit and releasing it each time. Think of squeezing your tea bag in the water to extract flavour.
In Scotland's cool, damp climate, evaporation is relatively slow, which is part of why Scotch can mature gently over decades without losing the whole cask in the process. In warmer, more humid conditions, such as India, where distillers like Amrut and Paul John mature spirit in Bangalore and Goa, or Taiwan, where Kavalan works in far more tropical heat, evaporation rates can run several times higher. Maturation also happens faster because bigger daily and seasonal temperature swings push the spirit in and out of the wood more aggressively. It's one reason a six-year-old tropical-matured whisky can taste as developed as something two or three times its age from a cooler climate. The final tea analogy: tea bags brew faster in hot water.
None of this happens in isolation. A cloudy-wort, short-fermentation spirit, tightly cut and matured briefly in a tired refill cask in a cool climate, will taste completely different from a clear-wort, long-fermented spirit given a wide cut and matured for years in an active first-fill sherry cask somewhere hot and humid, even if both started with identical barley.
That's really the point of all of this. Whisky's flavour isn't decided at any single moment; it's the accumulated result of dozens of choices, made by people, shaped by geography and given time to work themselves out in the cask. And that’s not to mention the element of luck, art and magic that happens through every step. Understanding even a handful of them changes how you taste and, more importantly, why two whiskies that look so alike on paper can taste like they come from entirely different worlds.
